​Church plot

Once past the trees, you arrive at the plot of our youngest plantations. These are the white grape varieties “Sémillon” and “Chardonnay”, below. The grapes produced give a white "Vin de Pays", since the Cahors appellation is reserved for red wines only.

 

Some rules about cahors wines : 

 - must contain a minimum amount of 70% malbec

- can only be blended with merlot or tannat. 

- there must be a minimum of 4,000 vines planted per hectare, with a distance of 1 meter between vines and 2.5 meters between rows.

 

Our production is limited to 5,000 liters per hectare, for qualitative purposes. Indeed, if production is too high, the quality of the wine could be less good.

The planting of new vines takes place in May/June. The first production which can receive the controlled designation would be fourth year  after plantation. The vines produce every year but their yield decreases while the quality increases with age.

The rules are much less strict for Vin de Pays, and the range of grape varieties that can be used is wider.

In 1997, before planting the whites, an examination of the soil indicated a strong resemblance in age and composition to those of Chablis. Chardonnay and Sémillon were therefore planted on the hill to produce our white wines.
